This week’s recipe, Jambalaya with Shrimp and Ham, was chosen by Anonymous New York.

I made a number of substitutions, of course. I wouldn’t be me without them!
I was supposed to use 1 green and 1 red bell pepper – I used 2 yellow ones
I was supposed to use ham – I used smoked turkey sausage
I was supposed to use chicken broth – I used beef (homemade in the freezer)
I was supposed to use cayenne – I used powdered jalapeno
I was supposed to use long grain white rice – I am using short grain brown
I added some yellow squash, too.


But, nonetheless, it was a hit with hubby and me, too. Hubby was glad that there were plenty of leftovers for his lunches!
For some silly reason, I always pictured Jambalaya as this difficult dish that would require hours of slaving over a stove. Now, of course using brown rice I did have to cook it longer (about 45 minutes), but that was no biggie. I am thrilled at how easy, and how tasty this is! It will definitely be made again!
