Fast Food Makeover: “Fried” Pickles

If you live in the south and have never heard of fried pickles, where have you been? They are the next greatest thing next to french fries and onions rings that has come out of a deep fryer in ions.

Of course therein lies the problem – deep fried. After getting an order from a local place the other night when I just couldn’t take the craving for them any longer,  hubby said – “I’ll bet you could remake these.” and I thought, You know, I’ll bet he’s right. So I did…

The verdict? Quite tasty, actually. I did use flavored chips and I think the integrity of the original flavor would have been better served by the plain chips, so that is what I listed in the recipe.

Not a bad sub to quell a craving!

And…if you would like, they would go great with Ranch Dressing to dip them in, like this one my friend Amanda just whipped up!!

Made Again “Fried” Pickles

  • 1/4-1/2 c dill pickle slices
  • 1/2 c. crushed baked potato chips
  • 6 tbsp pickle juice
  • 3 tbsp fat free half and half
  • 1 egg
  • dash Cayenne pepper

drain the pickle slices on a paper towel and allow to come to room temprature

mix egg, pickle juice, half & half and pepper in a bowl

dip pickles in liquid mixture

dregde pickles through crushed potato chips

place on a cooling rack over a cookie sheet

bake at 375 for 12-17 minutes or until browned and crisp
